Celebrate an Early Summer with Grilled Apricot, Watermelon & Arugula CBD Salad

Summer is just around the corner, which means the season of fresh produce has arrived. One of our favorite ways to enjoy warm weather fruits and vegetables is to combine them into a refreshing salad. Since most of us do not have time to spend hours in the kitchen, this quick recipe is not only delicious, but it is effortless to make and combines two of our favorite summer fruits: apricots and watermelon.

Grilled Apricot, Watermelon & Arugula Salad with CBD Balsamic Honey Vinaigrette

Serving Size: 4 Cook Time: 20 minutes

Ingredients:

Salad

4 cups arugula

½ medium watermelon cut into cubes

2 – 3 small apricots

¼ red onion

2 tablespoons Feta cheese to taste

A handful of chopped mint

Infused Balsamic Honey Vinaigrette

½ cup balsamic vinegar

¼ cup local wildflower honey

¼ cup extra virgin olive oil or kalamata cold pressed olive oil

0.25 grams CBDistillery 99% Pure CBDelicious Isolate Powder

Sea salt to taste

Black pepper to taste

Directions:

  1. Preheat a grill (or grill pan) to medium heat. Rinse the apricots and slice into sixths. Put the apricot slices on a skewer and brush lightly with olive oil. Place the apricots on the grill or grill pan and cook for 1 – 2 minutes per side. Grill just enough to caramelize them, but not cook them all the way through. Remove from heat and set aside.
  2. Next, cut the watermelon, mint, and onion. Use a knife to cut the watermelon in half and then into cubes. Discard the rind and seeds into your compost and place the cubes into a medium bowl. Set aside. For the red onion, chop ¼ of the onion into long, thin pieces to be incorporated into the salad. Also be sure to chop the mint into small, edible pieces. Place into a bowl and set aside.
  3. Now it is time to make the vinaigrette. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, and .25 grams of CBDistillery 99% Pure CBDelicious Isolate Powder (about ¼ of the jar). Mix until all of the ingredients are combined well. Season with salt and pepper. Remember, you will most likely have leftover vinaigrette to use for future salads, so be sure to have an air-tight container that will preserve the CBD dressing.
  4. The final step is to build your salad. In a salad bowl, add the arugula, mint, and red onion. Using a tablespoon, add your desired amount of salad dressing to the bowl and toss well. Plate the arugula mix onto four plates and top with watermelon, grilled apricots, and a sprinkle of feta cheese along with fresh ground black pepper. Pair with your favorite summer white wine, and enjoy!

By using CBD as an ingredient, there are a lot of different ways you can incorporate this organic compound into different recipes. Some of our favorite culinary ideas include making an infusion, drizzling CBD oil on top of a favorite dish or adding CBD to tea or coffee.

Unlike THC, CBD is a non-psychoactive cannabinoid that’s derived from cannabis and hemp. You can consume large amounts of CBD and it won’t get you high. Instead, CBD acts as a powerful medicine that helps aid in the treatment of various ailments. It is also an excellent nutritional source, so we love adding CBD to our cooking.

Chia Cinnamon CBD Parfait with Hemp Milk

Serves: 2Cooking Time: 5 minutesIngredients:

2 cups hemp milk (look for Tempt unsweetened hemp milk)

½ cup chia seeds

¼ cup agave nectar

1 teaspoon cinnamon

½ teaspoon vanilla extract

Directions:1. Using a blender, add all ingredients except for the chia seeds. Blend on high for one minute or until the mixture is smooth.

2. Pour the blender contents into a small mixing bowl and whisk in the chia seeds. Whisk for about 1 – 2 minutes to prevent clumping.

3. Pour the pudding into two glass mason jars or an air-tight container. Place the jars in the refrigerator and let cool for 6-8 hours or until the chia seeds have opened up to form a gelatin. Make sure to stir the pudding mixture a couple of times within the first hour to help keep the pudding texture consistent.

CBD Pesto Pasta with Spicy Shrimp

Serves: 4Cooking Time: 45 minutesIngredients:

CBD Raw Pesto

2 cups fresh baby spinach

1 cup fresh basil

½ cup fresh Italian parsley

½ cup cherry tomatoes

1 tablespoon pine nuts

2 teaspoons freshly squeezed lemon juice

⅓ grated Parmesan cheese

2 cloves garlic

2 tablespoon olive oil

1 teaspoon The CBDistillery 2500mg Hemp Cannabinoid Extract (or 4 ml per serving)

Dash of salt

Dash of black pepper

Spicy Shrimp Pasta

8 ounces uncooked Gigli pasta

1 pound fresh shrimp, peeled and deveined

1 pound asparagus cut into 2-inch pieces

½ mixed cherry tomatoes halved

2 tablespoon butter

1 tablespoon olive oil

1 tablespoon freshly squeezed lemon juice

1 teaspoon ground red pepper flakes

1 teaspoon cayenne pepper

Dash of salt

Dash of black pepper

  1. Beginning with the raw pesto ingredients, rinse off the leafy greens thoroughly and place all ingredients in a blender or food processor. Blend or process until finely chopped and pesto becomes a smooth sauce.
  2. Using a spoon, scoop the pesto sauce into a small bowl, cover with saran wrap, and place into the refrigerator until needed.
  3. Next, it’s time to make the pasta. Using a large pot, boil water over high heat. Add the uncooked Gigli noodles and cook according to package instructions.
  4. Using a large saucepan, heat butter and olive oil over medium heat until melted. Before adding the shrimp to the pan, dip both sides of the shrimp into a blend of ground red pepper flakes, cayenne pepper, salt, and black pepper. We prefer extra spicy, so make sure your shrimps are saturated with the spices. If you prefer less spicy, simply sprinkle some red pepper flakes on top. Add shrimp to the heated pan, add lemon juice, and cook until the shrimp turn pink on both sides.
  5. While the noodles are cooking, wash the asparagus and cut into 2-inch pieces. Place the asparagus into the boiling water with the pasta for the last 3 minutes of cook time. Drain in a colander and set aside.
  6. Once the shrimp have finished cooking, add the noodles and asparagus to the pan. Saute together briefly and remove from heat.
  7. Using the pesto sauce, add in 6 – 8 tablespoons depending on your preference. Add cherry tomatoes, small fresh basil leaves, and top with a sprinkle of Parmesan cheese.
  8. Serve and enjoy.

CBD Thanksgiving Cranberry Sauce

Add CBD to your favorite cranberry recipe for a delicious addition to this year’s Thanksgiving feast!

Ingredients:

  • ¾ cup sugar
  • ½ cup orange juice
  • ½ cup water
  • 12 oz cranberries
  • Pinch of salt
  • 1 cinnamon stick
  • orange zest
  • .33g 99% Pure CBD Isolate Powder

Directions: Over medium heat, combine sugar, orange juice, water, cranberries, salt, cinnamon stick, and orange zest to a saucepan. Stir cranberries occasionally and allowing them to soften. Once half of the cranberries have softened, add 99% pure CBD Isolate Powder. Continue stirring occasionally until cranberries have softened into sauce form. Remove from heat and serve chilled. Enjoy on top of your Thanksgiving turkey and sides!

CBD Whipped Cream

Ingredients:

Directions: Place a large mixing bowl into a freezer for 20 minutes to chill. Once cold, combine whipping cream, sugar, vanilla extract, and 99% pure CBD powder. Using an electric hand mixer whip the ingredients on high speed, decreasing as the mixture becomes thicker. Be sure not to over whip. Serve on top of your favorite desserts!

Thanksgiving CBD Infused Parmesan Mashed Potatoes

These are NOT your Grandma’s typical Thanksgiving mashed potatoes…

These CBD Parmesan Mashed Potatoes are a guaranteed hit at this year’s Thanksgiving feast.

Ingredients:

16 cups premade mashed potatoes
4 tbs butter
½ cup whipping cream
½ cup parmesan cheese
1 tbs salt
1 tbs pepper

Directions:

In a large mixing bowl, combine premade mashed potatoes, butter, whipping cream, 1/2 cup parmesan cheese, pepper, salt, and 99% pure CBD powder. Using an electric hand mixer, whip ingredients until pureed. Transfer the whipped potatoes to a large glass cooking pan (spray with non-stick spray). Evenly sprinkle 1/2 cup parmesan cheese over the potatoes. Bake at 400 degrees until potatoes are browned on top.

CBD Infused Steak and Veggie Buddha Bowl

The sixth recipe in the CBDelicious Cooking Series, Cooking with CBD. Looking for a healthy dinner option? This incredibly delicious, and easy to make, CBD Infused Steak and Veggie Buddha Bowl is an excellent source of protein paired with the 99% pure CBD isolate.

CBD Infused Steak and Vegetable Buddha Bowl

Ingredients:

STEAK

  • New York Strip or another steak filet, grilled or cooked as desired

VEGETABLES

  • 2 Tbsp olive
  • 1/2 red onion, sliced into wedges
  • 1 large sweet potatoes, cubed
  • 1 bundle (227 g) broccolini, large stems removed, chopped
  • 2 big handfuls kale, larger stems removed
  • 1/4 tsp each salt + pepper

CHICKPEAS

  • 1 15-ounce (425 g) chickpeas, drained, rinsed + patted dry
  • 1 tsp cumin
  • 1 tsp chili powder
  • Garlic salt or garlic powder
  • 1/4 tsp each salt + pepper

TAHINI SAUCE

  • 1/4 cup (56 g) tahini
  • 1 Tbsp Agave
  • 1/2 lemon, juiced
  • 2-4 Tbsp hot water to thin

Instructions

Preheat oven to 400 degrees F (204 C) and arrange sweet potatoes and onions on a bare baking sheet. Drizzle both with a bit of oil, making sure the flesh of the sweet potatoes are well coated. Roast for 8-10 minutes. While vegetables are roasting, heat a large skillet over medium heat and add chickpeas to a mixing bowl and toss with seasonings. Once hot, add 1 Tbsp oil and chickpeas and sauté, stirring frequently. If they’re browning too quickly, turn down heat. If there isn’t much browning going on, increase heat. I found 10 minutes total at slightly over medium heat was perfect. Once the chickpeas are browned and fragrant, remove from heat and set aside. Remove veggies from the oven after 8 – 10 minutes and flip sweet potatoes and add broccolini. Drizzle broccolini with a bit of olive oil and season with a pinch each salt and pepper. Bake for another 8-10 minutes, then remove from oven and add kale. Drizzle kale with a touch more oil and season with a pinch each salt and pepper. Bake for another 4-5 minutes then set aside. Prepare sauce by adding tahini, agave, lemon juice and CBD Isolate to a mixing bowl and whisking to combine. Add hot water until a pourable sauce is formed. Set aside. To serve: Divide vegetables between serving bowls and top with chickpeas + tahini sauce. Top with grilled steak. Best when fresh, though leftovers will keep for a few days in the fridge. There will most likely be leftover sauce, which can be added to leftovers or other meals.

CBD Infused Mummy Jalapeno Poppers

Just in time for Halloween! The fifth recipe in the CBDelicious Cooking Series, CBD Infused Mummy Jalapeno Poppers.

Here is what you’ll need!

Mummy Jalapeno Poppers Servings: 20 Jalapeno Poppers

INGREDIENTS:

  • .2g CBD Isolate.
  • 10 jalapeño peppers
  • 8 ounces cream cheese, room temperature
  • 8 ounces jack cheese, shredded
  • 1 package crescent rolls
  • 2 eggs, beaten
  • candy eyeballs

INSTRUCTIONS:

1. Preheat oven 400° F. In a small bowl, mix the cream cheese, jack cheese, and CBD Isolate until well blended. 2. Roll out the crescent rolls and using a pizza cutter or knife, cut into long pieces lengthwise. 3. Fill each jalepeño half with the cheese mixture. Wrap each jalapeño half with the dough, leaving a space for the eyes. Use two pieces of dough if necessary. Brush with egg mixture and place on baking sheet. 4. Bake in the oven for 8-10 minutes. Remove from the oven and press the eyes into the cheese where the opening is. Serve and Enjoy!

  • 1 teaspoon dried oregano

Combine all sauce ingredients in slow cooker and stir. Set to high and cover while making meatballs, or for 30 minutes. Combine all meatball ingredients except the mozzarella in a large bowl. Using your hands, mix until fully combined. Take a golf ball sized piece of the ground beef mixture and place a piece of mozzarella in the middle. Press meat around the piece of cheese, fully enclosing it. Repeat until all meat is used. Place meatballs in slow cooker and submerge in sauce. Cover and cook on high for 2-2½ hours, or until meat is fully cooked. Serve over pasta. Enjoy!

  • 4 tbs butter
  • 1.5 lb chicken
  • 1 teaspoon salt

  • 1 teaspoon oregano
  • 1 teaspoon basil
  • .25 cup parsley
  • 4 cloves of garlic, minced
  • 3 tablespoons flour
  • 2 cups milk
  • 1 cup parmesan cheese, shredded
  • 16 ounces penne pasta

Directions: In a large saucepan, heat .5 tablespoons butter until melted. Once melted, add 1.5lb chicken, .5 teaspoon salt, .5 teaspoon pepper, .5 teaspoon oregano, and .5 teaspoon basil to the mixture. Stir and cook on medium-low heat until chicken is fully cooked. Transfer to a bowl and place in a warm area. In a new or same emptied saucepan, heat 2 tablespoons butter over medium-low until melted. Add 4 cloves of minced garlic and half of the flour. Cook until the garlic begins to soften. Add the second half of the flour and 2 cups of milk. Stir. Add .5 teaspoon salt, .5 teaspoon pepper, .5 teaspoon oregano, and .5 teaspoon basil to the mixture. Add .5 cup parmesan and stir until melted. Add .3 grams of 99% pure CBD Isolate Powder and mix until dissolved. In a separate pot, bring water to a boil. Reduce heat and add penne pasta and cook fully. Strain pasta and pour into a mixing bowl. Add CBD infused cheese sauce and cooked chicken. Add .5 cup shredded parmesan cheese, garnish with parsley and enjoy!

CBDelicious: Salted Carmel 40mg CBD Potato Chip Cookies

This recipe makes approximately 24, 40mg cookies.

For this recipe, you will need:

Ingredients:
  • 1 gram 99% Pure CBD Isolate Powder
  • 2 sticks (1 cup) salted butter, room temperature
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1.5 cups flour
  • 1 cup potato chips finely crushed
  • 25 caramel candies
  • 1/4 cup heavy cream
  • Coarse sea salt
Directions

Preheat oven to 350°F/180°C. In a bowl, mix butter and sugar until very fluffy (about 10 minutes). Add vanilla and half of the flour. Mix. Add the rest of the flour. Mix. Stir in potato chips, and roll dough into 1” balls. Bake for 15-20 minutes, until the edges turn brown. In a saucepan, melt the caramels with the heavy cream. Add 1 gram 99% Pure CBD Isolate Powder. Stir until powder is dissolved. Drizzle over cookies, and immediately top with coarse sea salt.
